Korean Tacos

I really miss the food carts in P-Town.  I can’t get enough street food, and it’s not a hot commodity up here.  I’ve started making my own Korean tacos, and they’re pretty darn tasty.  Here’s the recipe if anyone else has a love affair with this fusion take on tacos. 

Ingredients
Chicken (I prefer breast meat)
Enough of your favorite BBQ sauce to soak your chicken in a slow cooker
Water
Hot Sauce
Garlic
Cilantro
Cabbage
Shredded Cheddar
Radishes or Water Chestnuts
Small flour tortillas

The preparation couldn’t be easier.  Set your slow cooker on the lowest heat setting, and fill it with the chicken, BBQ sauce, hot sauce, garlic, and a bit of water to keep things moist.  Let it cook for at least six hours.  Once it’s done, shred the meat, or cut it into small pieces.  Lay out the rest of your ingredients, grab a tortilla, and start piling up on the goodies.  Simple and delicious.
